I first had oil-poached fish in Napa Valley and loved the way this cooking method kept the fish so moist; you can’t really dry it out. You could prepare halibut or just about any other mild white fish this way. Be sure to use a mix of olive and vegetable oils to poach the fish; if you use 100 percent olive oil it will become too bitter. This is another really good-looking dish, with lots of pretty colors.
In Sri Lanka, an island nation, fish is a staple. It is used in salads, as stuffing for savory pastries, as a flavoring in relishes, as a snack food with drinks, and, of course, in hundreds of curries. This particular curry was served to me for breakfast on a sunny patio at Castlereigh, a tea planter’s home turned boutique hotel, along with fresh rice noodles and good, hot tea. On that cool morning in the mountains nothing could have tasted finer. Almost any fish may be used here, as long as it is firm and holds its shape—swordfish, salmon, pompano, sole, haddock, kingfish, and mackerel. I have used swordfish. Serve with Plain Jasmine Rice and Gujarati-Style Okra.

If you are looking for a superbly elegant, gentle dish, look no further. In a long line of meats and seafood grilled after they have been marinated very simply in a paste of fresh ginger, garlic, and chilies, this dish is a great family favorite. Have the fishmonger remove the halibut skin. I like to serve this with Karhai Broccoli and a potato or rice dish.
You can use almost any fish steaks here—salmon, kingfish, cod, haddock, swordfish, salmon, trout, pomfret, pompano, or tilefish—depending on the part of the world you live in. Instead of having to look for ajowan seeds (use 1/4 teaspoon, if you can get them), you can use dried thyme, which has the same flavor. When using the blender here, make sure you put the chopped red pepper in first, as that will provide the liquid needed to make a paste. If your blender remains stubborn, add a tablespoon or two of water. You could serve this with Zucchini and Yellow Summer Squash with Cumin, and Bulgar Pilaf with Peas and Tomato.

Although Turkey is surrounded on three sides by sea, it is not very strong on fish dishes. Seafood has not been part of the old Anatolian cooking traditions. Even in the coastal resorts, where seafood restaurants have mushroomed with the tourist trade, locals are not interested. The exceptions are Izmir and Istanbul, both famous for their fish markets and fish restaurants. The usual fare, like everywhere in the Middle East, is grilled or deep-fried fish. Swordfish kebab is a Turkish specialty, but other countries use other firm-fleshed fish, such as monkfish and tuna.
This recipe was created by chef Lachlan Mackinnon Patterson of Frasca Food and Wine in Boulder, Colorado. It's part of a special menu he created for Epicurious's Wine.Dine.Donate program.
For the polenta, chef Mackinnon Patterson recommends Anson Mills Rustic Coarse Polenta.

Fish stews abound throughout the Mediterranean and most evolved from the fishing boats themselves, as fishermen reserved the worst of their catch for themselves and cooked it on-board.

Maccheroncini al Pesce Spada
This dish epitomizes what I have found true Sicilian cooking to be: fresh tasting, light, and fragrant.

The first time my Nantucket Island friends Nigel Dyche and Sarah Chase made this for me, I was incredulous at how fabulous it was, yet so simple. The fish tastes of the sea and the smoke from the grill with no extraneous flavors to mask the ocean-fresh steaks. The mayonnaise coats the thick pieces of fish, keeping them moist inside and promoting a golden caramelized color on the outside. Nantucket Islanders use this recipe mostly for swordfish, and it is one of their favorite summer meals, especially when paired with thick slices of ruby-red garden tomatoes.

If you would rather use swordfish or sea bass, by all means do. Whatever the choice, grill some zucchini that have been quartered lengthwise, and toss egg noodles with butter and fresh black pepper. Then finish the meal with sliced strawberries topped with sour cream and brown sugar.

Serve the fish with steamed rice and braised bok choy or Napa cabbage for an elegant and easy Asian-inspired dinner. Begin marinating the fish at least three hours before you plan to cook it.

The Strait of Messina is a rich source for swordfish, which the Sicilians prepare in many ways. Here it is at its simplest: grilled and served with salmoriglio sauce. (In Sicilian, it is sammurigghiu sauce.) The words means "brine", a translation that does not convey the taste or texture of this cooked blend of olive oil, lemon juice, garlic and herbs. Serve with bread and pour a white wine, preferably Sicilian. For dessert, offer cannoli from the bakery.

The verde on the succulent swordfish comes from the cilantro and chili marinade and a silky avocado mayonnaise. Start out with salsa and tortilla chips, and serve Mexican beer throughout the meal.
