Make eggs Benedict even fancier with a few tender asparagus spears and a slice of pungent, melty brie cheese.
A great bite-sized treat! Switch this up by using blue cheese, gouda, or havarti to create different flavor profiles. Omit the bacon for a vegetarian dish.

I’m a sucker for ham and brie sandwiches, thus the inspiration for this dish. This quiche is particularly rich and filling, combining the smoky flavor of ham with the creamy texture of brie. For best results, when selecting your cheese, look for a ripe brie that is less firm and somewhat mottled in appearance.
Just a sliver of this ultra-rich tart will satisfy even the heartiest appetites. It features a quick herb-infused custard, made by blending softened Brie, eggs, and cream in a food processor, then pouring over sautéed Granny Smith apples in a deep pâte brisée shell.

GOOEY, OOZING CHEESE IS ALWAYS A HIT, especially when it’s sandwiched between two slices of crisp toasted bread. The contrast of rich Brie and the sweet and spicy chili sauce in this combination is sublime. Leave the rind on the Brie; it’s a natural, edible part of the cheese.

Pour this dressing over mixed greens such as Romaine, Boston, and one or two types of bitter greens.
Here is that American favorite, Chicken Cordon Bleu, deconstructed. This gorgeous dish pulls the soggy ham and cheese out of the stuffing, layering them instead over a crisp, juicy chicken cutlet. The rich triple cream cheese begins to melt when it hits the panko-crusted chicken, which then anchors the paper-thin slices of cured ham to them both. Baby arugula is tossed in a bright, acidic vinaigrette of Dijon mustard and red wine vinegar before being placed atop the dish. The peppery arugula and mustardy vinaigrette cut through the richness of the cheese and complement the salty ham. I serve this at lunch, but it would be wonderful at dinner as well.

Bed and breakfast inns are very popular in the areas surrounding Austin, Texas, which is known as the “Hill Country.” Around here, B&Bs are usually historic homes that have been in the innkeepers’ families for years. One of the best aspects of staying at a B&B is breakfast! The innkeeper traditionally gets up early and prepares a lovely morning spread for the guests. The richness of Brie, sausage, and egg reminds us of days well spent relaxing around a perfect breakfast with other guests at our favorite B&Bs.

To brie or not to brie . . . that is the quandary for many. Well, now that I’ve found ways to stave off the cravings without overindulging, I’m definitely a happy camper. Though the flavor is subtle here, the brie is great paired with the cranberry sauce and arugula leaves. In minutes, you’ll feel like you’re eating at a gourmet sandwich shop, but without the gourmet sandwich consequences.

Pat: Let’s face it, one of the great joys of roasting a big ole turkey or ham is the leftovers. Can you imagine what the day after Thanksgiving would be like without a big turkey sandwich? Anytime we have leftover ham, I dream of ham sandwiches on a soft roll with a little dollop of Miracle Whip. When it comes right down to it, I think I prefer the sandwiches to the actual meal. What follows are two of our favorite ways to dress up leftovers. The Turkey, Brie, and Cranberry Panini are crisp and cheesy and have become a year-round lunch staple.
I love sandwiches because they are one-stop shopping: meat, salad, and cheese, all stuffed into bread. Oooooh-la-la, this is one fancy French grinder. Vive la Hoagie.
We love the contrast of sliced almonds and golden-brown cauliflower against the risotto’s Brie-amplified creaminess.
Broiling the tomatoes adds rich flavor to the sandwich.
